The pH (hydrogen potential) is an indicator that measures the acidity or alkalinity (basicity) of a liquid. Pure water has a pH of 7, which is considered neutral. Liquids with a pH lower than 7 are acidic. Those above 7 are alkaline (basic). The skin's physiological pH is defined by the pH of its hydrolipidic film - which is around 5.5, so slightly acidic. This acidity helps maintain an effective skin barrier and protect the skin from harmful bacteria. Pollution, cosmetics, UV rays and many other stressors can alter the skin's pH and therefore its balance, making it drier, oilier or more sensitive. Ideally, you want your body cleanser to respect the skin's physiological pH or help rebalance it with an adapted pH, for example, a lower pH for dry or atopic skin.
